Make them some good armor and give them a weapon. Equipment doesn’t wear out when thralls use it so don’t worry about durability. You can also equip a thrall with a truncheon so they help you capture more (or better) thralls.
Easiest named thrall to capture is a Relic Hunter Treasure seeker IMO specifically the Fighters not the archers. Bring a buddy thrall with you equipped with a truncheon, while you have a shield and truncheon. Place a bed roll just outside the named city for spawning.
